Instant Pot Lentil Chili
Quick and easy meatless chili cooked in your instant pot.
Ingredients
- 1 cup brown or green lentils, rinsed well
- 1.5 cups of cold water
- 1.25 oz packet of chili seasoning
- 14.5 oz can of diced tomatoes
- 4.5 oz can of green chilis
- 15.5 oz can of kidney or cannellini beans
- 1 small yellow onion
- 1 medium to small green bell pepper
- 2 cloves garlic
Directions
Step 1
Roughly dice onion and pepper. Smash garlic and roughly chop.
Open all canned and packaged ingredients before heating the instant pot. Drain liquid from the canned beans.
Step 2
Set instant pot to sauté mode on high. Once heated, cover the bottom of the pot with oil and add onions and peppers. Sauté for 2 minutes, then add garlic. Stir frequently until just starting to brown. Turn off instant pot.
Step 3
Add remaining ingredients to the pot and cover with lid. Set instant pot to pressure cook on high for 10 minutes.
Step 4
When done cooking, allow instant pot to natural release for 2 minutes then quick release pressure. Stir and Enjoy!
Suggestions:
- Try on top of rice, corn bread or flour tortillas
- Top with plain lowfat greek yogurt
- Garnish with chives
- Spice it up with your favorite hot sauce
