Pickle Brine Chicken
Oven roasted split chicken breasts brined in pickle juice
Ingredients
- 2-4 Organic Split Chicken Breasts
- 24oz Pickle Juice
- Spice Mix Recipe
Directions
Step 1
Place chicken in a large zip lock bag. Cover completely with pickle juice. Let sit in refrigerator overnight, or up to 24 hrs.
Step 2
Preheat your oven to 425°.
Pat chicken completely dry with paper towels. Trim excess fat. Rub seasoning all over, including under the skin.
Step 3
Roast chicken in a baking pan for 40 minutes or until temperature reads 165°. Rest for 5-10 minutes before slicing.
