Multi-Cooker Lemon Chicken, Potatoes, and Gravy
Use a multi-cooker to create a savory chicken, potatoes, gravy dish in one pot. A quick, easy meal when paired with your favorite veg.
Ingredients:
- 16 oz fresh organic boneless skinless chicken breasts
- 16 oz tiny potatoes
- 1 tbs olive oil
- 1 small yellow onion
- 3 cloves garlic
- 8 oz of chicken stock
- 2 tbs of fresh lemon juice (about 1 lemon squeezed)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tsp cornstarch mixed with 1 tbs water, cream, or milk
- 1 tbs butter
- Optional
- 8 oz mushrooms
- Additional lemon slices to serve
Steps:
- Pound chicken breasts to desired thickness. Dry chicken and season both sides with salt and pepper.
- Set your multi-cooker to saute and add oil. Place chicken breasts in the pot and cook each side until golden and crisp. Take chicken out of the pot.
- Add onion and optional mushrooms to the pot. Cook until the onions start to soften.
- Add chicken broth, lemon juice, garlic, and herbs to the pot. Stir, making sure to scrape any bits off the bottom of the pot.
- Place the browned chicken breasts in the pot. Carefully add the tiny potatoes on top of the chicken. Turn off the saute feature.
- Secure your pressure cooker lid to the pot. Select pressure cook, set to high, for 6 minutes.
- Instant-release pressure when cooking time expires.
- Remove chicken breasts, potatoes, and onions from the pot and set on serving vessel(s). Add optional lemon slices.
- Set the multi-cooker to saute and wait util the liquid is simmering. Add butter. Slowly pour small amounts of cornstarch into the liquid and stir. Repeat until desired gravy thickness. Pour gravy into serving vessle or on top of chicken and potatoes.
